1 lb ground meat (ground turkey, beef or chicken)
1 onion, peeled and diced
1 bell pepper, seeded, chopped (green, yellow, or red)
1 garlic cloved, minced
1 (16 oz) can tomatoes (whole or diced)
3 c canned beans, drained, rinsed
3 T chili powder (more or less to taste)
1 t ground cumin
1 small can tomato sauce or paste.

Brown meat in a large pot; drain fat. Stir remaining ingredients. Cover and simmer 25 minutes. Uncover and continue cooking until thickened. Use whichever type of beans you prefer: Pinto, kidney, black, white, or a combination. I have used canned corn and black beans for another option. You can use white beans and chicken or turkey to make white chili. You may also add a seeded and diced jalapeno pepper to kick up the heat. This easy recipe can adjust to your preferences or what you find in the cupboard.
