2/3 c. sugar
1/4 c. cocoa
3 tbsp. cornstarch
1/4 tsp. salt
2-1/4 c. milk
2 tbsp. butter
1 tsp. vanilla

Directions:
Place the sugar in a heavy duty saucepan. I like to sift the cocoa & cornstarch into the sugar to remove any lumps. Add salt. Whisk together. While whisking, slowly add the milk.
THIS IS THE TIME CONSUMING PART - PATIENCE IS KEY FOR SUCCESS!!!
Cook over heat that is no more than Medium Low. The pudding must thicken slowly FIRST, then gently boil AFTER it is thickened. This can take upwards of 15 minutes to accomplish - but worth the wait. Whisk 1 minute more after it boils. Remove from the heat & add the vanilla & butter, whisking to combine. Pour into individual serving dishes, or a graham crust pie shell. Be sure to cover directly onto the surface of the pudding with plastic wrap, to prevent a skin from forming. Cool completely.
