1 1/2 Pounds Of Lean Boneless Beef Rounds Steak (Cut Into Cubes)
3 tbsp. of Butter
3 tbsp. of Oil
1 Clove of Garlic
1 Celery Stick (Diced)
1 Small Onion (Diced)
1 Large Carrot (Diced)
1 Can of Corn (Can Also Be Frozen)
1 Can of Peas (Can Also Be Frozen)
4 Yukon Gold Potatoes (Cubbed)
2 Containers of Beef Stock
2 tsp. Beef Concentrate
3 tbsp. of Tomato Paste
Fresh Parsley
2 Bay Leafs
Salt and Pepper
Parmesan Rind

Directions:
Directions:
Melt the butter and oil in a stock pot and add the meat cubes. Cook until brown about 6 minutes. Add the onion, carrot, celery, garlic and saute for 5 minutes. Add beef stock and concentrate along with the tomato paste. Add bay leafs, parsley, parmesan rind and salt and pepper to soup. Cook on medium/low heat for 45 minutes. Add potatoes, corn and peas to soup and continue to cook for 45 minutes.

Serve with a sprinkle of parmesan cheese

You can add any other vegetables that you like, butternut squash, string beans or sweet potatoes. You can also add a small macaroni or barley if you like..
