2 c dry green or brown lentils
1 medium onion
2 medium carrots
2 celery stalks
1 clove garlic
1 or 2 t olive oil
1 can diced tomatoes
2 bay leaves
Salt
Fresh ground pepper to taste
Water or broth as needed
½ lb German sausage

Directions:
Directions:
Wash the dry lentils and soak the lentils overnight; use at least 1½ cups of water per cup of lentils. Dice the onion and slice the garlic. Cut the carrots and celery into small pieces. In a pan coated with the oil, sauté the onions and garlic until they soften. Add the other vegetables and continue to sauté until they are heated all the way through, about 5 minutes.

Add water or broth to the lentils until they are completely covered with liquid. Pour the lentils into a crock pot. Put the bay leaves into the pot and add the can of tomatoes and the sautéd vegetables. Slice the sausage into half inch thick “coins” and add to the pot. Set the crockpot on high for about 2 hours. The soup should be at a boil. At this point make sure the lentils are covered with broth. Add more liquid if needed. Turn down to medium or low and simmer until the lentils are cooked. On low it will take 6 - 8 hours.
