Syrup Mix:
1 bottle Hard Apple Cider
1/4 c Maple Syrup
3/4 tsp. Salt

Spice Mix:
1 tsp. Whole Fennel Seed
1 tsp. Whole Pepper Corns
1/2 tsp. Whole Coriander
1/2 tsp Ground Cinnamon

2 Tenderloins
1-1/2 Tbsp. Rosemary, chopped
1 Ginger, sliced

Olive oil, was needed
Salt and Pepper

Directions:
Directions:
Combine Syrup Mix ingredients in medium bowl.

Grind Spice Mix ingredients with mortar and pestle and stir into Syrup Mix.

Place tenderloins in gallon size baggie. Add rosemary, ginger, and syrup mix. Seal and place into refrigerator overnite.

Next day, remove tenderloins from baggie onto sheet pan. Pat dry, then drizzle with olive oil and sprinkle with salt and pepper. Roast at 400 degrees for 20-25 minutes. Remove from oven and tent with aluminum foil and rest for 10-minutes. Serve sliced on the diagonal.
