1 tbsp. of Olive Oil
4 Slices of Diced Bacon
1 Onion Diced
1 Celery Stalk Diced
1 Carrot Diced
4 Cloves of Garlic Diced
2 tbsp of Tomato Paste
2 Large Container of Chicken Stock
2 tsp. of Concentrated Chicken
Parmesan Rind
Fresh Parsley
2 Bay Leaf
1 tsp. of Oregano
Pepper and Salt
2 Cans of Cannellini Beans
2 Cups of Ditalini Pasta

Directions:
Directions:
Heat oil and add bacon to a stock pot. Cook bacon until crisp and then add carrot, celery and onion and cook until soft. Add garlic and saute briefly. Stir in tomato paste and add chicken stock and concentrated chicken. Add Parsley, bay leaf and oregano. Pepper and salt to taste. Add Parmesan rind to broth. Cook for 45 minutes on low heat, add the beans and pasta and continue to cook for 20 minutes. Serve with parmesan cheese.
