3 eggs and 3 egg whites
1/2 cup milk or almond milk
1/2 cup grated cheese (I use swiss/guyere or mozzerella)
1/2 package mushrooms, washed and sliced
1/2 red bell pepper, cored and cubed small
1/2 package spinach
1/2 package pancetta (from TJ), cooked crisp
marinated artichokes - 6 pieces or more

Preheat oven to 400* In medium nonstick pan over med heat, cook mushrooms and peppers & any other veggies in olive oil until cooked. Add spinach and cook until wilted. Put into greased 8" pie pan. Cook pancetta in pan until crisp, drain on paper towel. Add on top of veggies in pie pan. In bowl, mix eggs and milk. Add 1/2 of cheese. Pour over veggie mixture. Add artichoke hearts into each wedge.
Bake for 15 minutes, Sprinkle rest of cheese over top and finish cooking 15 more minutes. Broil 2 minutes until top browned. Cool slightly and cut into 6 wedges. Enjoy!

Yummy breakfast meal loaded with veggies. I freeze some wedges to eat later in the week and top with avocado slices.
