3 oz cream cheese softened
7 Tbsp butter softened
2 Tbsp light brown sugar
3/4 c + 1 Tbsp flour
1/4 c cocoa

Filling
1/3 c packed light brown sugar
1/3 c light karo syrup
1 tsp vanilla
1/4 tsp salt
1 egg
1 c sweetened coconut - toasted

Preheat oven to 350º In a small bowl, beat cream cheese and butter with mixer until well blended. Add sugar and beat until creamy. Add remaining ingredients mixing until well blended. Divide dough into 24 pieces. Press evenly into mini muffin tins. Next prepare filling. In a medium bowl, mix sugar, corn syrup, vanilla, salt and egg with wire whisk. Stir in toasted coconut. Spoon about 2 tsp filling into each cup. Bake 25-30 minutes until filling is set. Let cool 3-5 minutes in pan. With tip of knife, gently loosen from pan and cool on wire rack. Store tightly covered for up to 1 week.
