1 3/4 c flour
1/2 c ground almonds toasted
1 tsp baking powder
1/2 c softened butter
1/2 c sugar
1 egg
1 tsp vanilla
3/4 c red raspberry jam
Confectioner's sugar

Directions:
Directions:
Mix flour, almonds and baking powder in small bowl. Set aside. Beat butter and sugar until light and fluffy. Add egg and vanilla mix well. Add flour mixture beating until well blended. Divide dough into four equal portions. Wrap in plastic and refrigerate at least one hour or overnight. Preheat oven to . Line baking sheets with parchment paper. Place 1 portion of dough between sheets of waxed paper to 1/8" thick. Cut into 2 1/2" rounds. Place 1" apart on baking sheet. Cut three 1/4" circles from 1/2 of the cookies using a sharp knife. Repeat with remaining dough. Bake 8 to 10 minutes or just until the edges are lightly browned. Remove to wire rack and cool completely. Assemble cookies by spreading 2 tsp preserves on each solid cookie and top with one cutout cookie. Sife confectioner's sugar over assembled cookies. Store in air tight container.
