2 cups flour
2 tsp baking powder
11/2 tsp baking soda
11/2 tsp salt
2 tsp cinnamon
2 cups white sugar
11/2 cups canola oil
4 eggs
2 cups grated raw carrots
1 81/2oz can crushed pineapple
1 cup flaked coconut
1/2 cup chopped nuts
3/4 cup raisins (optional)

Cream Cheese frosting
1/2 cup butter
1 (8oz) pkg cream cheese
I tsp vanilla
I lb sifted icing sugar

Directions:
Directions:
Preheat oven to 350ºF
Sift together flour, baking powder, baking soda, salt and cinnamon. Add sugar, oil and eggs. Mix well
Add carrots, pineapple, nuts, coconut and raisins..
Pour into 3 9” round cake pans (greased and floured).
Bake for 35 - 40 minutes
Remove from oven and eat sit on cooling racks for a few minutes. Turn out from pans and cool completely.
Fill layers , top and sides of cake with Cream Cheese Frosting.

Frosting
Combine butter, cream cheese, and vanilla. Gradually add icing sugar and beat till smooth.
