"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 loaf white bread
1/4 cup margarine or butter
1 cup chopped onions
1 1/3 cup chopped celery
1 egg
1 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Poultry seasoning
1/4 tsp. Sage

Directions:
Directions:
Tear or cut bread into pieces. Sauté onions and celery in butter until they are very soft and starting to brown. Combine bread, vegetables, egg and seasonings. Add hot water or unsalted chicken stock to mixture until nicely combined but not too soft. Use dressing to stuff turkey or wrap in foil and bake in oven alongside turkey for about 1 hour.

* I like a bit more sage.
** If stuffing turkey keep dressing a little drier as it will get moisture from the turkey.
