5-6 medium carrots
1/2 cup chicken broth
3 medium onions, sliced
1/2 cup butter
1 tbsp. Flour
1/2 tsp. salt
1/2 tsp. pepper
3/4 cup water

Directions:
Directions:
Cut carrots into strips. Cook carrots until tender-crisp in chicken broth. Slice onions and sauté in butter for 15 minutes. Add flour, salt, pepper and water to onions. Stir until thick. Add carrots and broth. Pour into casserole and place in 350º F oven for 20 minutes. May be made ahead and warmed to serve.

Note: When we make this recipe for 150 people we make 30 lbs. carrots.
