2 cups all purpose flour
2 cups sugar
¼ tsp salt
1 tsp soda
1 tsp baking powder
1 tsp cinnamon
4 eggs
1½ cup vegetable oil
2 cups grated carrots
Directions:
Directions:
Bake at 375º for 25 minutes
Beat eggs and oil until well mixed – mix sugar, salt, soda, baking powder, and cinnamon into egg and oil mixture – last fold in carrots – make 3 layers - place in a cake pan and bake – let cake cool before icing it.
