Squash and Carrot Casserole
(Grandma Bullock’s recipe)

2 lbs squash
2 cups sliced or diced carrots
¾ package Pepperidge Farm corn bread stuffing mix
1 cup sour cream
1 can cream of chicken soup
1 medium onion
1 stick of butter

Directions:
Directions:
Bake at 350º for about 30 minutes
Cook squash and carrots separately in salted water – drain – melt butter and mix with stuffing mix – put drained squash in a large casserole dish – cover with1/2 of stuffing mix – sprinkle onion over this – add carrots and the rest of stuffing mix – mix sour cream and cream of chicken soup together and pour over mixture in casserole dish – spread to edges – cut through several times with a knife – place in oven to bake
