½ cup chopped onion
1 clove garlic (minced)
2 tbsp butter or margarine
2 tbsp all purpose flour
½ tsp salt
Pepper as desired
1 ¼ cup mild
3 medium potatoes peeled and thinly sliced

Directions:

Bake at 350º for 40 minutes
Grease 1 ½ qt casserole and set aside – for the sauce in a saucepan and cook onion and garlic in butter until tender – stir in flour, salt, and pepper – add milk all at once - cook and stir over medium heat until thick and bubbly – place ½ of thinly sliced potatoes in prepared casserole – cover with ½ of sauce – repeat potato and sauce layers – bake covered for 40 minutes and then uncovered for the last 15 to 20 minutes until potatoes are tender.

For cheesy scalloped potatoes prepare as above except stir ¼ cup shredded white cheddar into the thickened sauce until melted
