1 lb Italian sausage
1 yellow onion, diced
2 large carrots, peeled and diced
4 garlic cloves
1/4 cup all purpose flour
5 cups chicken broth
14 oz refrigerated cheese tortellini
1 tsp salt
1/2 tsp pepper
1/2 tsp Italian seasoning
6 oz chopped fresh spinach
2 cup half and half (or heavy cream)
Fresh Parmesan for garnish as desired

1. In large stockpot over medium/high heat, cook sausage until browned. Using slotted spoon, transfer the cooked sausage to paper towel lined plate and set aside.
2. Add onion, carrots and sauté for 5 minutes or until veggies are soft. Add garlic and sauté for an additional 2 mins. Stir occasionally
3. Whisk in flour and cook for 1 min. Gradually add in chicken broth, whisk to combine. Continue cooking until it begins to simmer. Reduce to medium/low and simmer another 6 mins.
4. Pat as much grease off sausage, then add to pot.
5. Add tortellini, salt, pepper, Italian seasoning, spinach, and half and half. Stir. Simmer for 5 minutes or until tortellini is cooked through.
6. Serve with fresh Parmesan, if desired.
