2 C Fresh or 16 oz Frozen Package of Blackberries or berries of your choice
1/2 C White Sugar
3/4 C Cold Berry Juice
1 T Tapioca Starch or substitute Corn Starch

Preheat Oven to 400º
Unthaw prepared frozen pie crust in refrigerator. Unthaw blackberries in bowl. Pour off liquid from blackberries into measuring cup at enough berry juice or water to make 3/4 cup of liquid. Add 1 level tablespoon of tapioca starch. Mix. Add a 1/2 cup of white sugar to liquid. Pour in saucepan. Heat on medium low. Once you see Any bubbles continue stirring for 1 minute. Remove from heat. Thickness should be slightly thinner then the desired cut piece. Play unthaw drained blackberries in premade 9inch pie crust. Pour thickened berry juice into pie shell. Dot top of berries and thickened juice with butter 9 thin slices of butter.

For top crust ……invert slightly thawed pre made crust over top. Or use metal spatulas to remove sections of crust. Cut slits in top of there are not enough gaps. Seal edges by pressing together and flying edge. Coat top crust with a mixture of egg white and 2 tsp sugar.


Bake 30 mins.

Or USE MAMA PIE CRUST MIX prepared according to package for top crust. I like to some made up frozen so it’s available for a quick top crust.

GF crusts cook best in a convection oven or oven set to Quick Bake. Covering a GF crust will cause it to become less than crisp. If it does you can reheat it.
