Seared Sea Scallops with Butter Sriracha Glaze

12 oz sea scallops (8+)
Salt and pepper
1 tsp olive oil
1-2 tsp butter
Splash of white wine
Sriracha chili sauce
Parsley
Lemon

Directions:
Directions:
Rinse scallops with cold water and at dry – season with salt and pepper to taste – heat sauté pan to high heat with 1 tsp of olive oil and 1 tsp butter - once pan is hot and ready gently add scallops – sear uninterrupted for about 2 minutes each side – take scallops our of pan and side plate – deglaze pan to make sauce by adding a splash of white wine and a splash of sriracha until all the little golden bits of scallop have released from pan – add extra sriracha and butter as desired – remove sauce from heat and pour over scallops and sprinkle with parsley - add lemon wedges as a garnish.
