1 lb ground beef
1 cup elbow macaroni
¼ cup onion
¼ cup chopped green pepper
2 tbsp melted butter
2 tbsp flour
1 can (1 lb) tomatoes, undrained
1 cup shredded cheddar cheese
½ tsp salt
⅛ tsp oregano
⅛ tsp pepper
1 tbsp grated Parmesan cheese

Directions:

Bake at 375º for 20 to 25 minutes
Cook macaroni according to directions on package – rinse in cold water – drain – brown onion and green pepper in butter over low heat in a large skillet – add beef and brown – stir in flour – add tomatoes and cook until mixture thickens – stir in cheese, seasonings and macaroni – spoon into a buttered 2 quart casserole – sprinkle parmesan cheese over top – bake until hot and golden brown
