½ cup ketchup
½ cup soy sauce
½ cup sugar
¼ cup rice vinegar or apple cider vinegar
1 (1 inch) piece of fresh ginger, peeled and finely grated
2 to 3 garlic cloves, peeled and finely grated
3½ to 4 lbs bone-in, skin-on chicken pieces
Canola oil for brushing the grill

Heat the grill to medium and cook for 25 to 35 minutes
In a large bowl or a gallon-size resealable plastic bag, combine the ketchup, soy sauce, brown sugar, vinegar, ginger and garlic and stir or shake until combined – save out and refrigerate ½ cup of the mixture for basting on grill later – add chicken to the remaining mixture – stir or shake until evenly coated – refrigerate overnight turning chicken at least once – when ready to cook, oil your grill well. Heat grill to medium – add chicken to grill and cover – basting and turning over every 5 minutes with the reserved marinade after turned. Juices should run clear when done
