3 eggs
1 cup canola oil
2 cups sugar
2 cups grated zucchini

Combine and mix well then add:
3 cups flour
1 tsp soda
1 tsp salt
¼ tsp baking powder
3 tsp cinnamon
½ cup nuts pecans or walnuts

Directions:
Directions:
Bake at 350º for 1 hour
Grease 2 loaf pans – fill each between ½ to ¾ full
Bake in a preheated oven. If you wish you can make muffins but decrease the baking time to 30 -35 minutes and raise the oven temperature to 375º.
