Ingredients: 1 large can of sweet potatoes or use fresh ones, bake, and peel 6 oranges – cut in half 1 tbsp margarine or butter ½ + cup brown sugar (packed) ½ cup orange juice 1 tbsp lemon juice ½ cup milk 1 tsp vanilla ½ tsp cinnamon ½ tsp nutmeg Optional ½ cup of pineapple drained (I do not use pineapple)

Directions:Heat oven to 350º Prepare oranges by first cutting them in half – then use orange juicer to get juice out – save orange juice and use ½ cup in sweet potatoes – try to get pulp out of each orange shell until the insides are white – set aside. You can use fresh or canned sweet potatoes Put your sweet potatoes (drained if using cans or baked if using fresh) in a mixing bowl with all other ingredients listed above and mix first and after completely mixed whip them like you are making creamed potatoes. Place orange shells in a baking dish that will hold them, and then use an ice cream scoop to fill each orange shell. Bake at 350º for about 10 minutes. After baking I use the small marshmallows to put on top on the heated sweet potatoes. When the marshmallows begin to brown they are ready.
Cleaning out the orange shells takes the most time. I usually do this a day ahead and refrigerate. I learned a new trick from Kelly, she used a small butane torch to brown the marshmallows (much faster and less change of getting them too brown) For Thanksgiving and Christmas I use 2 cans of sweet potatoes and increase the other ingredients accordingly. |
