Charlotte's Kuchen Recipe

CRUST:
1 T. Yeast
1 T. Sugar
3 T. Warm Water
Mix and let set in mixing bowl you are going to use until it is foamy.
Add:
1 c. Milk
1/8 stick of Butter
Heat milk mixture with butter until butter is melted. Let cool until tepid.
Add: and stir in the above mixture, then add to yeast mixture in mixing bowl.
1/4 c. sugar
2 beaten eggs
Add: About 1 1/2 cups flour and beat in until smooth. Let stand 15-20 minutes until mixture rises.
Add: 2 1/2 c. flour and mix in. You may have to add more flour to make a soft dough that doesn't stick to hands. Let rise 1 hour punch down and let rise another hour. Divide dough into four parts, roll out and put in pie pans. Dough should come up ¾ the sides of the pie pan. Finish like you do a pie crust. Let set at least 15 minutes.
Add: A layer of thinly sliced apples, peaches, or other fruit. Sprinkle lightly with cinnamon if you wish.
FILLING: Heat, but do not boil.
1 c. Milk
1 c. Half and Half Cream
Remove from heat: Mix together the ingredients below and add to the milk/cream mixture.
1/2 c. Sugar
2 T. Flour
1 T. Cornstarch
1/4 t. Salt
2 beaten Eggs
Stir in well and bring to a boil for 3-4 minutes. Stir all the time so it won't burn. Add 2 t. butter and mix in . Remove rom heat and add ¼ t. vanilla. set aside and let cool to a warm temperature. Pour ¾c. filling over fruit and smooth over top. If there is more filling divide evenly over four kuchen.
TOPPING:
1 1/2 T. Sugar
1 1/2 T. Flour
1/4 t. Cinnamon
1 T. Butter
Mix until crumbly and sprinkle lightly over filling.

Bake 350º for about ½ hour or until crust is nicely brown. Remove from oven and let stand about 5 minutes. Remove rom pan and let cool on rack.
