2 bunches collard greens, ribs removed and chopped; about 2 points.
1 1/2 tsp Garam Masala
1 tsp Turmeric
4 Tbsp grape seed oil or olive oil
2 Tbsp mustard seed oil
1 tsp Sea Salt or Himalayan Salt
6 Tbsp chopped fresh cilantro

Heat a large saucepan or Dutch oven over medium high heat. Add the garam Masala and turmeric, heat until fragrant, doubt 2 minutes, stirring to make sure that the spices do not burn.
Add both oils into the pan, stirring to make sure that the spices and oils completely mix. Add the collard greens and salt and toss to coat in the oil. Cover the pan and cook until the greens are wilted, about 5 minutes. Remove fro the heat and mix in the chopped cilantro.

Garam Masala: use a store bought spice blend or us the following recipe to make your own:
1 tsp whole cloves, 2 Tbsp black pepper corns, 1 small stick Cinnamon.
Grind all ingredients in a spice grinder or mortar and pestle.

Unless the collards are very fresh and tender they will probably need a little water added before you cover the pan (about ut 1/2 cup us usually enough). after 5 minutes cooking, you can add another 1/2 cup water if they still do not look tender enough. After you turn off the heat, let them sit covered for another 5-10 minutes to soften them a bit more.
