½ cup margarine or butter
¾ cup white sugar
1 cup loose brown sugar
2 eggs
1½ cups rolled oats
1½ cups white flour (or whole wheat flour, or a combination of the two)
1 tsp. baking powder
1 tsp. baking soda
1 cup shredded coconut
1 cup chocolate chips

Directions:

Preheat oven to 350º F. Blend softened margarine and white sugar in mixer. Add brown sugar. Blend again. Stir in the eggs. In a separate bowl, mix the remaining ingredients. Add to wet mixture. Blend. Roll into small balls and press with a fork. Bake for about 12 minutes.

Less sugar variation:
In addition to the margarine, ALSO add ¼ cup grapeseed oil. Decrease white sugar to ½ cup. Keep brown sugar amount the same.
