1½ lbs. lean ground beef
1 medium onion, finely chopped
2-3 stalks celery, chopped
3 cups chow mein noodles
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup minute rice (uncooked)
2-3 Tbsp. Soy Sauce

Cook ground beef, celery and onion on stovetop; drain.

Return to stovetop and add soups, 2 cups chow mein noodles, rice, soy sauce. Pour into a 2 qt. buttered (or sprayed with Pam) casserole dish. Top with the last cup of chow mein noodles.

At this point the casserole can be baked at 350º for 1 hour (covered) - uncover and finish baking for 1/2 hour more. We prepare in the morning and put in fridge -- then bake when we get home from work.

This is a great dish for a cold winter night. Can be prepared in advance and baked just before serving.
It is a recipe handed down from Jim's grandmother and has become a family favorite.
