1 pound bacon and/or sausage, ham**

1 cup small diced bell pepper, red prefered

1 Small onion

6 large eggs

1 cup milk

½ cup sour cream

½ teaspoon salt or season salt

1/4 teaspoon pepper

24 ounces [about 6 cups] frozen tater tots

1 cup [about 4 oz] shredded cheddar cheese

1 cup [about 4 oz] shredded Monterey Jack or Pepper Jack

Chopped green onions, sour cream or salsa [optional]

Sour cream and salsa for serving [optional]

Cook bacon/sausage thoroughly over med heat with peppers and onions until the veggies are tender. Drain grease and set aside.

In medium bowl, whisk the eggs, milk, sour cream, salt and pepper until smooth.

Lightly grease 9x13 baking pan. Place the tater tots in a single layer across the bottom of the pan [I use only as many tater tots as will fit snugly in a single layer in the pan.

Sprinkle bacon and veggies over the tater tots evenly. Sprinkle cheese evenly across the top

Pour the egg mixture evenly over and across the top. Cover the dish with lightly greased foil and refrigerate overnight [up to 18 hours]

Preheat oven to 350 degrees F. Bake covered for about 45 minutes. Uncover and bake an additional 20-25 minutes longer until golden, bubbly, and set.

Optional - top with green onions, chives, sour cream or salsa.

Serve warm.

**bacon has been the prefered meat.
