2 ¼ cups flour
2 tablespoons baking powder
3 tablespoons sugar
½ teaspoon salt
1 teaspoon cinnamon (optional)
2 large eggs
½ cups oil
2 ¼ cups milk
1 teaspoon vanilla extract

Directions:
Directions:
Put flour, baking powder, sugar, salt, and cinnamon in a bowl. Stir with a wire whisk to blend well. In another bowl, combine eggs, oil, and milk. Blend thoroughly with an immersion blender until frothy. (Or use a blender until fluffy.) Pour the wet ingredients into the center of the flour mixture. Mix until just combined. There should be lumps in the batter. Let sit for 10 minutes while heating the waffle maker. Spray waffle maker with food release spray. Cook waffles according to waffle maker directions. Serve with butter and syrup, jam, peanut butter, etc..
