1 cup butter
½ tsp vanilla
1 cup granulated sugar, divided into thirds
1 egg
2 cups angel flake coconut
2 cups flour
½ tsp. baking soda
1 egg yolk
1 T. cream

Directions:
In large bowl, cream the cup of butter;
Add: ½ tsp vanilla and the sugar divided into 3rds, beating thoroughly after each addition.
Blend 1 egg with 1½ cups coconut into mixing bowl, mixing thoroughly.
Stir in the dry ingredients: 2 cups flour and ½ tsp soda, blending well.
Turn mixture onto wax paper and knead lightly, 5-10 X to blend well.
Form dough into 6 rolls, about 1" in diameter; CHILL 3 HOURS.

Spread 1½ cup angel flake coconut onto another sheet of waxed paper; save a little coconut to drop on the cookies after they have been cut into pieces..
Turn each of the 6 rolls of dough in the coconut flakes.
Slice each roll into ½ pieces; place on greased cookie sheets.

Mix 1 egg yolk with 1 T. cream, blending well.
Brush this mixture onto cookie tops, sprinkle with a little bit of coconut before placing a pecan half on top of each cookie.

Bake at 325º for 20 minutes.

Getting all of the ingredients out and measured as well as mixing bowls, wax paper cookie sheets, cutting board and knife, pastry brush before assembling will make this process much easier.
