Ingredients: 1 (16 oz.) container sour cream 12 oz. shredded Monterey Jack cheese (or taco blend) 1 (20 ounce) can green enchilada sauce (I prefer red but you can use green) 18 (6 inch) corn tortillas 1 (2 ounce) can sliced black olives or green olives (or both)

Directions: Preheat oven to 350Ί F
In a small bowl, combine the sour cream and 3/4 of the cheese.
Pour a small amount of enchilada sauce to coat bottom of a Into a 9x13 inch pan or casserole dish.
Layer 6 tortillas on bottom of pan.
Layer half of the cheese-sour cream mixture and 1/2 of the olives over the tortillas.
Put another layer of 6 tortillas
Layer the rest of the cheese-sour cream mixture this layer.
Layer the rest of the olives
Put another layer of 6 tortillas
Pour the remaining enchilada sauce over the final layer of tortillas.
Bake for 20 minutes (uncovered).
Cut into squares and serve.
Optional:
Boil chicken breast, shred and add to the layers for Cheesy chicken enchiladas You can save some of the cheese and olives and make that the top layer, but then wait until cheese is brown and bubbly to take out of the oven. |

Notes: To be honest I found this recipe online somewhere, made a few modifications because my husband is a picky eater and Voilΰ or should I say ahν estα. I've included it in this family cookbook especially for my sister-in-law Amanda. She loves Enchiladas I'm writing this on her birthday so she is on my mind.
