4 c all purpose flour
3 tsp baking soda
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
5 large egg, room temperature
1 1/2 c vegetable oil
2 c sugar
1 tsp vanilla extract
2 c shredded zucchini
1 1/2 c chopped pecans
1 c grated peeled apples

Directions:

In a large bowl, combine the flour, baking soda, cinnamon, nutmeg and salt. In a large owl, beat the eggs until frothy. Add the oil, sugars and vanilla; beat until blended. Stir into the dry ingredients just until moistened. Fold in the zucchini, pecans and apples.
Transfer to 3 greased 8x4 in loaf pans. Bake at 350º until a toothpick inserted in the center comes out clean, 55-60 minutes. Cool loaves for 10 minutes before removing from pans to wire racks to cool completely.
