1 large zucchini
1 tablespoon Onion (finely chopped)
1 tablespoon Jalapeños (chopped)
2 tablespoons tomatoes (chopped)
3/4 cup Milk (I use 2%)
2 string cheese chopped or 1/4 cup mozzarella cheese
1/4 cup frozen corn kernels
1 tablespoon olive oil
Salt and pepper to taste

Drizzle Olive
onto a (skillet) pan. Heat about 2 minutes .

Chop a large or two small zucchini(s) (Do not peel)
Set aside.

Chop the jalapeño, tomato and onion
add to heated pan - sautéd trio- mix about 1-minute. Until the aromatic smells come through.
Add chopped zucchini , frozen corn kernels, milk, string cheese chopped or mozzarella cheese
Cook over medium heat until cheese melts and milk is bubbly.
Add black pepper to taste- enjoy!

This originally was a recipe from my childhood. Grandma made this at least once a week, and we’d enjoy with warm homemade flour tortillas!

Calabasitas-If you like zucchini’s this dish is ridiculously good!
