½ c. butter
1 c. boiling water
1 c. flour
¼ t. salt
4 eggs

Directions:
Directions:
Add butter to boiling water; stir to melt. Add flour and salt. Cook over medium heat, stirring vigorously, until mixture is smooth and will form a soft ball that will not separate. Cool mixture slightly. Add eggs, one at a time, beating well after each egg. Drop ¼ cup batter shaped into balls onto a greased cookie sheet. Bake at 450º for 15 minutes, then at 325º for 10 minutes. After cooled, fill with vanilla pudding, custard, or whipped cream.

For chocolate éclairs – Frost the top of each cooled cream puff with chocolate frosting. Fill cream puffs with pudding or vanilla ice cream.
