1 cup plus 3 tbsps. water, warm
1 tsp. lemon juice
1 tbsp. oil
¾ tsp. sugar
1½ tsps. salt
3 cups whole wheat flour
2¼ tsps. active dry yeast

Directions:
Directions:
Mix all ingredients together. Place on a floured surface. Divide into pieces. Shape each into a smooth ball; flatten to a 5" circle. Cover and let rise in a warm place 30 minutes or until double in size. Place 5 circles at a time on a large cooling rack. Place cooling rack in oven and bake at 500ºF for 5 minutes until puffed and tops just begin to brown. Remove from oven and cool. Cut circles in half and fill. Rolling and baking instructions should be followed carefully to be sure the bread bakes with the pocket.
