2 cups shredded cheddar cheese
1/2 cup softened butter
1 tsp. Paprika
1/2 tsp. Cayenne pepper
1 cup flour
2/3 cup pepper jelly

Directions:
Directions:
Using medium speed on electric mixer, beat together cheese, butter, paprika and cayenne. Stir in flour until mixture forms a dough. Shape into 36 small balls. Press each into a mini muffin cup to form a shell.

Spoon pepper jelly into each tart shell. Bake at 400ºF for 10 minutes or until golden brown. Cool in pan for 5 minutes. Remove from pan and cool on wire racks. Serve warm or at room temperature. Baked tarts can be frozen for up to a month.
