Ingredients: 2 cups flour 2 tbsp packed orange zest 1/2 tsp salt 1 cup butter, softened 1/2 cup white sugar, plus extra for rolling cookies 1/4 cup brown sugar 1 large egg, room temperature 1 tsp vanilla 1 cup toasted sweetened coconut 6 oz semisweet chocolate, roughly chopped

Directions:Heat oven to 350º. Combine flour, zest and salt in large bowl and whisk til combined evenly. Using a mixer, beat together butter and sugars, over high speed until light and fluffy. Beat 2 more minutes til the mixture looks like wet sand. Add egg and vanilla and beat until just mixed Reduce speed and add flour mixture and coconut. Beat just to combine. Shape the dough into logs and wrap in plastic wrap. Refrigerate for at least 2 hours and up to 2 weeks Cut the logs into 1/2 inch slices. Roll the cookies into the white sugar. Shake off excess and bake until set and golden on the edges (12-15 min) Cool on racks. Melt chocolate in a small pan. Dip 1/2 the cooled cookies in chocolate, scraping off excess. Set on cooling racks and place in refrigerator till chocolate sets. |
