Savory Crostata Recipe

Crust
1 1/2 cups flour
1/2 tsp salt
3 tbsp cold butter
1/2 cup mascarpone cheese
1 1/2 tbsp lemon juice
3 tbsp cold

Filling
2 oz pancetta, diced
1/2 cup grated Fontina cheese
2 cups sliced mushrooms
3 scallions chopped
1 tbsp chopped garlic
Pinch of salt and pepper
1 1/2 tsp minced combo of thyme, rosemary and parsley
2 tbsp grated Parmesan
Directions:

Crust
Mix together flour, salt and butter til crumbly.
Add mascarpone cheese and lemon juice. Mix together.
Add cold water and mix til crumbly
Place on lightly floured surface an form into a disk. Wrap in plastic wrap and refrigerate for 20 minutes.

Filling
Fry pancetta till crispy.
Remove from pan to paper towels..
Add mushrooms to pan and cook til tender and brown. Add scallions and garlic. Cook for 2 to 3 minutes. Remove from pan and cool slightly
In bowl add pancetta, mushroom mixture,, salt, pepper, herbs and Parmesan cheese. Mix together.
Form crust into a 12 inch round disc. Top with filling and fold crust edges over into filling. Brush with egg and bake in a 400º oven for 20 minutes or until browned and bubbly.
Serve warm or cold
