12 C flour
12 C 2% milk
1 T Kosher salt

Mix 8 cups flour with all the flour and salt on high speed for about 30 seconds.
Stop the mixer and scrape down the sides of the mixing bowl.
Start again and mix until all lumps are gone - about 1/1/2 min.
Stop the mixer and scrape down the sides of the mixing bowl.
Put the mixer on slow speed and add the remaining 4 cups milk and eggs - one at a time.
Mix only until incorporated - DO NOT OVERMIX, YOU DON'T WANT ANY AIR IN BATTER.
Fill sprayed muffin tins to 1/4 in. from the top (about 6 oz depending on the size of the pan)
Place filled tins in 400F oven on low fan speed DO NOT BAKE ON A SHEET PAN
Bake until sides of popovers are brown - about 15 min.
Turn oven down to 375F. Finish baking until golden brown; approx 1 hour DO NOT OPEN OVEN DOOR. Makes 32.
