1 large onion, sliced
1 ½ cups carrots, sliced
celery ribs, sliced
2 garlic cloves, minced
3 (14 ounce) cans nonfat beef broth
1 (28 oz.) can diced tomatoes, undrained
1/2 head of cabbage, coarsely chopped (not shredded)
2 beef bouillon cubes
1 teaspoon cajun spices
1/4 teaspoon basil
1 zucchini, sliced

Directions:
Directions:
Spray large stockpot with cooking spray. Saute onion, carrots and celery until tender, approximately 5 minutes. Add garlic and continue to saute for 1 minute.

Combine beef broth, tomatoes (with liquid from can), cabbage, bouillon cubes, Cajun spice, and basil in the saucepan. Bring to a boil; reduce heat; simmer approximately 30 minutes.

Add zucchini, continue simmering for another 10 minutes. Serve hot.
