1/2 cup butter
1 cup chopped pecans
1 cup cooked mashed sweet potatoes (about 3 ?)
1/2 cup firmly packed brown sugar
2 large eggs, beaten
1 cup dark corn syrup
1+1/2 TB vanilla
1 tsp pumpkin pie spice
2 TB bourbon (optional)
9" unbaked pie shell

Whipped Cream

Directions:

Preheat oven to 425
º
Boil then mash potatoes until smooth

Melt butter in a saucepan then add pecans & cook over low heat until butter is golden & pecans are toasted - stir constantly.

Remove from heat & Add remaining ingredients & mix well.

Pour into pie shell & bake for 10 minutes, then reduce temp to 325º & bake an additional 45 minutes or until centermmis set.

Cool completely before serving with whipped cream
