2 cups unbleached flour
1 TBSP baking powder
¾ tsp salt
10 TBSP cold unsalted butter, diced
¾ cup finely diced ham
½ cup grated sharp cheddar cheese
½ cup + 3 TBSP cold buttermilk

Directions:
Directions:
Preheat oven to 425º. Line a baking sheet with parchment paper.

Whisk dry ingredients together. Work in butter by hand until mixture is crumbly. Add the ham and cheese and stir until well mixed.

Add the ½ cup of buttermilk and stir to moisten. Turn dough out onto a clean surface and knead for a minute. Divide the dough in half and pat each half into a ¾ inch thick circle.

Cut biscuits with a 2 inch round cutter. Place on the prepared baking sheet. Brush tops with the remaining 3 TBSP of buttermilk or melted butter.

Bake for 12-15 minutes until golden brown.
