1 T olive oil
minced onion
1/2 t minced garlic
1 pound mild italian sausage
32 oz chicken stock
2 cans petite diced tomatoes, with juice
6 oz. tomato paste
1 t oregano
1/2 t Italian seasoning
2 T basil
8 uncooked lasagna noodles, broken into bite sized pieces
1/2 c parmesan cheese
1 c shredded mozzarella cheese
salt and pepper

Directions:
Directions:
Heat olive oil in a large pot over medium heat. Add onion and garlic. Add sausage and cook until browned. Drain excess fat.
Add in chicken stock, tomatoes and tomato paste. Stir. Add oregano, Italian seasoning and basil. Bring to a light boil and add noodles. Cook for 8-10 minutes until noodles are tender.
Stir in parmesan cheese and salt and pepper to taste.
Add mozzarella to top.
