2 cups uncooked instant rice
½ teaspoon cajun seasoning
1 package (12-oz.) frozen peeled deveined medium shrimp
3 tablespoons butter or margarine
2 teaspoons cajun seasoning
½ cup sour cream
½ cup mayonnaise or salad dressing
½ cup chopped celery
½ cup sliced green onions
⅓ cup chopped green pepper
¼ cup fresh snipped parsley
½ teaspoon salt
1 package cooked ham chopped
1 jar pimentos drained and diced
1 cup halved or quartered cherry tomatoes
6 slices bacon, crispy fried and crumbled

Cook rice according to package directions with ½ teaspoon cajun seasoning add to water, set aside.
Thaw shrimp according to package directions. Saute in butter and cajun seasoning 3 to 5 minutes or until done. Drain. Stir sour cream, mayonnaise, celery, onion, green pepper, parsley, and salt together in a large bowl until well blended. Gently stir in all ingredients except bacon until evenly coated with dressing. Cover and chill 4 to 6 hours.

To make your own cajun seasoning.
Combine ¼ cup ground red pepper
3 tablespoons salt
1 tablespoon each pepper, chili powder, paprika, and ground coriander with
2 teaspoons ground cloves and 1½ garlic powder in blender container. Process until well mixed.
Store in a tight container. Makes ¾ cup.
