3 large potatoes
3 large or 4 medium carrots
1 whole large onion, chopped
1 lb bacon
3 cans minced clams with juice
2 cans cream of celery soup
1 large can creamed corn
2 t dried tarragon
2 T dried or fresh parsley
2 c half and half cream
Salt, to taste
Cracked black pepper

Directions:
Directions:
Peel and cube potatoes; peel and slice carrots. Place in a soup or stock pot and cover generously with cold water. Season to taste with salt and a generous amount of cracked black pepper. Bring to a boil, then turn down heat and simmer until vegetables are done, then mash. Meanwhile, slice bacon into chunks. Sauté until brown; drain off all but 3 T drippings. Sauté chopped onion in drippings until clear and firm. Add to potato and carrot mixture. Add rest of ingredients except cream. Bring to a slow simmer, then add cream and do not boil. Serve and pass the cracked black pepper. Sprinkle with parsley.
