½ C oil
½ c flour
1 onion minced
2 cloves garlic minced
1lb pork tasso
½ C vermouth
2 cans chicken broth
3 bay leaves
1 lb shrimp peeled
salt and pepper and a pinch of cyenne
1 T parsley or 2 T. fresh parsley
Tony's Chachere
4 green onions chopped

Directions:
Directions:
Make a roux with flour and oil. Cook until it is the color of chocolate. Season with Tony's. Add onions to brown roux and cook until onions are limp Allow sauce to simmer 20 minutes. Add shrimp 5 minutes before serving. Cook until shrimp are pink. Serve over cheese grits (see recipe)
