Turmeric Salmon Recipe

5 T. olive oil
2 bunches Swiss chard, ribs and stems removed, leaves coarsely chopped
1 shallot, thinly sliced
1 3" piece of ginger, peeled and thinly sliced
Salt and pepper to taste
½ tsp. turmeric
1½ lb. salmon fillet (ask for a thick center cut)

Preheat oven to 300º.
Heat 2 T. oil in skillet over medium-high heat.
Add Swiss chard, shallot, ginger.
Cook 6 minutes.
Season with salt and remove from heat.
Combine 2 T. oil and turmeric in small bowl.
Place salmon, skin side down, on top of greens in skillet.
Season with salt and coat with turmeric oil.
Transfer to oven and bake until fillet is opaque and flakes easily, about 30 minutes.
