2 pkgs dry yeast
¼ c warm water
1 c scalded milk
½ c sugar
¼ c shortening
1½ t salt
4¾ to 5¼ c flour
1 t grated lemon rind (if desired)
2 beaten eggs
1½ c mixed candied fruits
½ c raisins

Directions:
Directions:
Soften yeast in warm water. Combine hot milk, sugar, shortening and salt. Cool to lukewarm. Add 2 c flour and lemon peel. Beat, add eggs, beat; stir in yeast. Add fruits and remaining flour (or enough to make a very soft dough). Let rest 10 minutes. Knead about 6 minutes until smooth and elastic, adding enough flour as necessary to work. Put in greased bowl and let rise until double (about 2 hours). Punch down, divide dough in 3 parts, round each into a ball, let rest 10 minutes. Place round loaves on greased cookie sheet, pat tops to flatten slightly. Cover and let rise until almost double in bulk (about 1½ hours). Bake in 350 degree oven for 25 to 30 minutes. Cover tops with foil after 15 or 20 minutes to prevent over browning. While still warm, glaze with powdered sugar icing.
