1½ - 2lb. skinless, boneless chicken breasts
½ tsp. salt
½ tsp. pepper
2 tbsp. butter
4 cloves garlic, minced
1 cup reduced-sodium chicken broth
1-1½ lemons, sliced
4 tbsp. capers
2 tbsp. fresh parsley, snipped

1. Slice chicken breast into thin pieces. Sprinkle with salt and pepper.
2. In a large skillet melt butter over medium-high heat. Add chicken; cook for 8 minutes or until browned and no longer pink, turning once halfway through cooking.
3. Remove chicken from skillet; set aside.
4. Add garlic to hot skillet; cook until lightly browned. Add chicken broth to skillet,
scraping up any browned bits from the bottom. Bring to boiling.
5. Add lemon slices and capers. Cover; reduce heat to low. Cook for 4-5 minutes or
until lemon slices are softened and releasing their juices.
6. Return chicken to skillet and heat through.
7. To serve, spoon caper mixture over chicken. Sprinkle with fresh parsley.
 

Chicken Thighs with Vegetables

6-8 chicken thighs, bone-in or boneless
3-4 potatoes, cubed
3-4 carrots, sliced
3 stalks celery, sliced
1 onion, chopped or sliced
1 large clove of garlic, cut up
1 can chick peas, drained and rinsed
1 can Pastene Kitchen Ready tomatoes
8 tbsp. olive oil
4-6 oz. cold water
salt and pepper to taste

1. Heat oven to 350º. Spray roasting pan with cooking spray. (Our pan is 12" in diameter.)
2. Prepare chicken thighs: remove skin, make 2 incisions in each thigh and put
a piece of garlic in each incision.
3. Spray pan with cooking spray. Spread oil over bottom of pan. Place chicken and vegetables in pan.
4. Place in oven and sauté for 15-20 minutes letting ingredients get coated with oil.
5. Remove pan from oven. Add tomatoes, salt and pepper. Scatter the remaining pieces of garlic over chicken. Add veggies. Return to oven.
6. Occasionally stir vegetables and turn thighs. If tomatoes get too thick, add water.
7. Check if thighs are cooked and check tenderness of potatoes and carrots.
8. Last few minutes of cooking add chick peas. Do not allow vegetables to get soft.

Chicken Piccata is one of Grandma's favorites. It has recently been added to our collection. Grandpa learned the tasty Chicken Thigh recipe from Nonna.
