Fresh or frozen broccoli florets (2 packages)
4 cooked chicken breasts
Rice (white or brown)
½ c. grated sharp cheddar
½ c. buttered break crumbs (or panko)

Sauce:
2 cans Cream of Chicken soup
1 c. Mayo
1 tsp. Lemon Juice
2 c. Sour Cream
1 tsp. Curry Powder

-Cook Chicken - saute or wrap in foil and cook 45 minutes
-Combine sauce ingredients
-Layer in greased 9 x 13 glass dish: rice to cover the bottom, broccoli, and then chicken
-Pour sauce over and refrigerate overnight covered with foil

Before baking:
Sprinkle grated sharp cheddar and bread crumbs on top
Bake 350º for 25-30 minutes

This is a recipe that I got from my sister in law back in the early 80's. It's a great one dish meal. I have often made it for friends who have just moved or neighbors in need. The curry takes people by surprise but it is very subtle and delicious.
