"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
Dried Pinto Beans
Bacon or ham (if I don't have ham handy, I fry an entire package of bacon)
salt
chili powder
1 medium onion, chopped

Directions:
Directions:
Use a crock pot liner to make cleanup easier. Rinse and sort dried pinto beans and place in crock pot. Fill crock pot to within an inch of the top with water. If there is time, soak the beans overnight or for several hours. Then add meat and chopped onion. Cook on low in crock pot for at least 16 hours (Start in the evening and check the next morning to make sure it still has enough water). Stir once or twice while cooking. Add salt to taste, starting with a tsp. Add 1-2 tsp. chili powder. Make sure the beans are tender before serving. Serve with cornbread.

Personal Notes:
My dad taught me that the trick is to cook beans for a very long time. This really easy to do, but you have to plan ahead.
